Hill IN all recipes where flour is used, unless otherwise stated, the flour is measured after sifting once.When flour is measured by cups, the cup is filled with a spoon, and a level cupful is meant.A tablespoonful or a teaspoonful of any designated material is a level spoonful of such material. Slices of Sweetbreads, Doria StyleCut four heart sweetbreads, blanchednicely, in halves, horizontally. Trimall to the same shape and size, andsaute in butter. When nearly done,take out the sweetbreads. Add butter,if needed. Then, when hot, add threetablespoonfuls of flour, half a teaspoon-ful of salt, and a dash of paprika. Cookuntil frothy, then add a cup of creamand three-fourths a cup of chickenbroth or white stock, and stir untilthickened.
